Celebrating Success!

Today is an exciting day!! 

Please Help me to Celebrate my coach Kasey Caplis and her 1 YEAR ANNIVERSARY as a Beachbody Coach!! 
Kasey and I met online and she found me through my blog.
She is a Wife, Mother of two, a certified Dietitian and LIVE Cize instructor from Boston!! She joined me in my in my challenge groups last summer and I knew that I had met my twin from another mother!!! LOL!
She is funny, witty and brutally honest!! She made the challenge groups fun for me as the coach, and for the other challengers! I knew she would make an AMAZING coach and she has!! << It only took about 60 times of me asking her to join my team before she signed up.... but I saw great potential in her, AND she has definitely BLOWN me away!!
Kasey is not only my co-worker now, but she has become one of my closest friends! It is a pretty amazing feeling to meet awesome people online, but getting to work with them and watch them crush goals is amazing!

Sweet Potato & Roasted Red Pepper Bisque

SOUPS ON!!! Fall is here and I am ready for SOUP!! 

The Sweet Potato and Roasted Red Pepper Bisque is soo yummy! 

My mouth is watering just thinking about it!




Ingredients:

  • 1 sweet potato (aka yam)
  • 1/4 red pepper
  • 1 cup vegetable broth or water (free fix food)
  • 1 tsp finely grated peeled ginger root
  • 1 1/2 tsp extra virgin olive oil
  • 2 tsp. miso paste, diluted in 1 tsp. hot water
  • Tamari or Bragg liquid Aminos, Himalayan salt and herbal seasoning to taste.

Peel and cube sweet potato. Cook in boiling water until tender. Drain and set aside. Meanwhile, roast a whole red bell pepper on gas stove top or grills, turning frequently until evenly charred on the outside OR in your oven at 400 degrees for 15 to 20 minutes, turning every 10 minutes or until skin is charred.

Put pepper in bowl and cover with towel for 10 minutes to steam. Clean off skin and seeds by running under cool water. Remove seeds, cut into quarters, and chop one quarter into 1/2 inch cubes. 

Place sweet potato, pepper, broth or water, ginger, oil, and miso in blender. If you want chunky soup, set aside some chunks of pepper. Blend thoroughly, adding more liquid to achieve desired soup consistency. Transfer to pot and gently heat on low until hot. Add tamari or aminos, salt, and seasoning if desired.

Serves 1.

Pumpkin Pie Protein Bars

Fall is in the air...... and with that comes CRAVINGS for PUMPKIN EVERYTHING!!

Just got done baking these amazing pumpkin protein bars! Every once in awhile we need to spice things up with our diet and nutrition. As I type I am sitting here with my cup of coffee and munching on my 4 protein squares for my morning snack! YUMMO!!!

Pumpkin Pie Protein Bars 



This is a great add to your morning or afternoon snack!

Nutrition Facts: 
Nutrition (without walnuts): 1 square = 47 calories, .7 g fat, 8 g carbs, 3.7 g protein
Nutrition (with walnuts): 1 square = 63 calories, 2.3 g fat, 8 g carbs, 4 g protein

Ingredients:

  • ½ C Xylitol Brown Sugar Blend (Ideal)
  • 1 - 4 oz. jar baby food applesauce
  • 2 tsp. ground cinnamon
  • 1 ½ tsp. ground ginger
  • ½ tsp. ground clove
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • ½ tsp. salt
  • 2 tsp. vanilla extract
  • 4 large egg whites
  • 1 - 15 oz. can of raw pumpkin
  • 2 C oat flour
  • 2 scoops vanilla whey protein
  • ½ cup almond milk
  • ½ C chopped walnuts (optional)
Directions:
  1. Preheat the oven to 350.
  2. Spray a 9 X 13 Pyrex dish with non-stick spray.
  3. Combine first 11 ingredients and mix well.
  4. Add the final 3 ingredients (4, if adding walnuts), and mix until incorporated. Spread batter into the Pyrex dish and bake for 30 min.
  5. Makes 24 squares.
