22 Minutes Hard Corps


OK so when you think of Tony Horton what is the first word that pops into your head?

If you would of asked me 5 years ago to say what I was thinking I would've said something like:

INTENSE

HARD CORE
IMPOSSIBLE
RIPPED
NOT FOR ME
No Way I CAN DO THIS





I associate Tony Horton with P90X and P90X to me was the HARDEST workout that anyone could ever choose to do.  Push ups, pull ups, and all that weightlifting was NOT my JAM at all!  For some reason I thought that Shaun T and Insanity was a much better idea!  Little did I know that it was probably a HARDER workout than P90X.   So basically at 230 pounds I got SCHOOLED and I also lost 30 lbs in the process and fell in love with Tony and P90X!!

So, let me just tell you this!  Tony Horton and his workouts should NOT intimidate you whatsoever!  TRUTHFULLY I am not just saying that because I am a coach but because I am someone who never ever completed a fitness program in my life, and a fellow skeptic.  I didn't even think home workout programs worked until I started doing P90X.  But I will be completely honest, Tony Horton can create a killer program with really amazing results and he is a GREAT guy and a has a HUGE heart!  He truly cares about YOU and your results.  This program is for ALL ability levels.

This workout is not a workout that requires you to have a base level of fitness or have done any other Tony Horton Workouts before.


You can use little or no weights, there are modifiers in EVERY workout and as you get stronger, your stamina builds, you feel more confident, you can increase your weights and up your intensity.  Plus you can do ANYTHING for 22 minutes... right!!!! 





4 1/2 years ago I started working out at home because I just didn't want to pay for the gym membership that I was afraid I wouldn't use {because that was my previous trend}. I needed accountability and I was able to find a whole world of support online in my challenge group. I WAS READY!! I was ready to prove my Dr's wrong and loss weight!  

I 100% believe in the workouts, the nutrition program, the support you get from a coach which is the secret sauce and the entire experience!  I believe that if I didn't have the support from my coach and the group I wouldn't of ever truly had the transformation that I did!  It was my coach that picked me up when the results didn't happen after the first week, it was my coach who introduced me to clean eating, it was my coach who was my sounding board, my voice of reason when I wanted to eat the doors off the pantry and it was the encouragement from the group that made me even more motivated to just CRUSH IT!

Shrimp Thai Red Curry Recipe (Gang Dang)

Thai Red Curry Recipe (Gang Dang)

  • 1 pound uncooked shrimp
  • 2 tbsp red curry paste ( 2 = level 3 spicy)  more if you want it really spicy, less if you want it milder I use ) *Use the paste not the powder! 
  • 2 cups of coconut milk 
  • 2 tbsp fish sauce
  • 2 large red chillies (sliced diagonally and deseeded)
  • 1/4 cup kaffir lime leaves (I didn't use these) 
  • 1 1/4 teaspoon honey or brown sugar ( I tried to leave out the honey and it wasn't the same) 
  • 1 cup Carrots cut into sticks 
  • 1 cup of chopped zucchini
  • 1/2 cup green beans (chopped)

  • My Tip: I add about a 1/2 bunch of fresh cilantro on top after it cooks
  • I add any vegetable I have to this and make it a clean out the fridge dish! It is great if you have leftover veggies from another recipe. I have made many different varieties with this sauce! 
  • Chicken may also be used! 

Heat a wok on a medium heat, then add 1 cup of coconut milk, and 2 tbsp of red curry paste. Mix the red curry paste into the coconut milk and cook for about 3 minutes, then add raw shrimp, 2 tbsp of fish sauce and 1 1/4 teaspoon of honey. Stir thoroughly and cook for about 3 minutes until the shrimp begins to turn pink. Remove shrimp and set aside.

Now add 1 cup of carrots, 1/4 cup of kaffir lime leaves, 1/2 cup of green beans, 1 cup of sliced zucchini, and 2 large sliced red chillies. Give everything a stir, then add the remaining 1 cup of coconut milk.

Allow the curry to simmer for about 5 to 10 minutes, stirring regularly, until the vegetables are cooked. Re add the shrimp about a minute or two before the vegetables are done to reheat. Then serve with some steamed jasmine rice or brown rice noodles.

Thai Spicy Peanut Sauce with Chicken and Vegetables

Lately I have been CRAVING Thai food and anything with noodles!! I made this last night for dinner and both Brian and I said it was a keeper!! It's a version of a very popular California Pizza Kitchen dish I cleaned up, this Thai Chicken Pasta is restaurant quality, with easy to find ingredients. I think it would also be a great way to play around and add different veggies or substitute the meat for tofu since the sauce has such a great flavor!  
The mix of vegetables and chicken with the spicy-sweet and umami sauce is one your family will want over and over again. Enjoy!


Thai Spicy Peanut Sauce with Chicken and Vegetables


Serves:6 servings 
Prep time:20 mins 
Cook time:20 mins 
Total time:40 mins  

INGREDIENTS 
1 pound brown rice spaghetti 
4 tablespoons oriental sesame oil, divided 
1 cup julienned carrots 
2 cups napa cabbage, sliced 
2 cups chopped, cooked chicken breast meat 
8 green onions, chopped 
5 garlic cloves, minced 
1 tablespoon minced peeled fresh ginger 
¼ cup honey 
¼ cup creamy peanut butter 
¼ cup soy sauce 
3 tablespoons unseasoned rice vinegar 
1½ tablespoons Sriracha
Optional: Garnish with a few raw unsalted peanuts 



INSTRUCTIONS:
 Bring a pot of water to boil. Add 1-2 tbsp of salt to season the water. Cook pasta, al dente (I shoot for a minute shy of what the box says) Drain pasta and toss with 2 tbsp sesame oil. Pat dry the inside of the pot and add 1 tbsp of sesame oil. If you would like to add some green onions as a garnish at the end, reserve ¼ cup of them before putting the rest in the pan. Add the green onions, carrots, napa cabbage, chicken, garlic and ginger. Saute for a minute or two until they have softened and barely start to turn color. Add in the honey, peanut butter, soy sauce, vinegar and Sriracha. Stir all the ingredients together and add the pasta back into the pot. Toss the pasta with the rest of the ingredients and serve! Garnish with remaining green onions if you chose to reserve some.

Spinach Chimichurri Shrimp with Rice


While visiting my Sister last week I was on the hunt for meat free dinner choices! I love to cook and Shrimp sounded good! I stumbled on this recipe and changed it up a bit! Everyone loved it so I wanted to add it here! Super Easy and Fancy!! :) 
I always "mold" rice in a measuring cup!! My Mom asked how I did this to make it look pretty so I thought I would share that here as well. Food that looks good always taste good! 

Spinach Chimichurri Shrimp with Rice



INGREDIENTS

  • 1 c. spinach, tightly packed
  • 1 c. fresh cilantro, tightly packed (about 1 bunch cilantro)
  • 1/4 c. Chopped red onion
  • 3 garlic cloves, chopped
  • kosher salt
  • 1/2 tsp. crushed red pepper flakes
  • 1/4 c. red wine vinegar
  • 1/2 c. plus 1 tablespoon extra-virgin olive oil
  • 1 c. rice pilaf, Brown Rice or I used Sushi Rice above. 
  • 1 lb. medium shrimp, peeled and deveined

DIRECTIONS

  1. In a small food processor, combine spinach, cilantro, onion, garlic, salt, red pepper flakes, and vinegar. Pulse a few times and scrape down sides. With motor running, drizzle 1/2 cup olive oil into mixture and process until almost smooth.
  2. In a medium pot, cook rice according to package instructions; keep covered.
  3. In a large skillet over medium-high heat, heat remaining tablespoon olive oil. Sauté shrimp until cooked and pink in color, about 5 minutes. Turn off heat and toss shrimp well with half of chimichurri.
  4. Serve shrimp over rice pilaf, topped with remaining chimichurri sauce. Enjoy!
