I am truly blessed....

Ever have one of those full circle moments, where you just think to yourself... I am truly blessed?
That was me today...
As I worked today catching up on emails, messages and listening to training calls. I was taken back by the blessings my beachbody business has given me over the years and especially in the last three months.

With the terminal diagnosis for my father in law and the injury to my mother in law my whole world was flipped and my focus had to shift.
Again reminding me of the importance of this business in my life.

It is truly a blessing to be able to work from ANYWHERE from a laptop or at times a smartphone. 
This business layout and my team working hard toward the goals of helping people has honestly saved my mind of worry with financial debt and has given me the most precious gift.... TIME.
There were many days where I couldn't go into work at the spa and in doing so knew that I wasn't going to get paid. We were called into the ER and when they moved my father in law to hospice we were told at the time that he had 3 days to live.
That blessing of TIME gave me the ability to be there for my husband to support him. It gave me memories and stories told to me from my father in law in the 10 days he actually lived in hospice.


This freedom gave me a moment with him alone when Brian was getting a coffee where he thanked me for loving and taking care of his son.
It gave me a week after his passing to be with my husband in his time of need and loss.
It all started for me because I wanted to save monthly on shakeology but I never realized at the time how many ways this business would change my life.
A lot of people don't realize there is a financial side to coaching. I've built a business that provides residual income for me and family, simply by helping people live healthier and building a team of others that do the same.




These are not co workers. These are people that have become my families best friends. This business is full of people who want to see you succeed and lift you higher.


If you aren't living for something way bigger than yourself, we should talk.

Thank you



I would like to personally say Thank you to all of our family and friends for the support, love, sympathy cards and messages we have received with the passing of my father in law.

Brian and I have been feeling like we have hit a wall and spent most of the weekend resting and spending time together. It is amazing how you can run on simply adrenaline for three months.

I had lunch with my Mother, Aunt and Grandmother on Friday and it occurred to me after eating and being barely able to keep my eyes open that I think that was the first normal meal I had eaten in a long time.

I decided then and there that everything can wait... sure I have a ton of laundry, a messy house, heck I even have christmas decorations that still need put away!! But I put down my to do list and and focused on what I needed most, Rest. 

Brian is doing ok and it is still hard for him to talk about everything that happened. I continue to let him know that I am here for him and at times he opens up. 

My Mother in Law is still in a care center receiving therapy for her leg. We have a Dr's appointment for her on thursday and hopefully she will be cleared to apply weight to her broken leg and return home with a care nurse. 

To us our New Year started out very differently than we expected, honestly I have no idea where the time went. Our focus was on family and being there in their time of need. I wouldn't change a thing and I feel good in knowing that we made every effort to be apart of my father in laws last days. 


Each day is a gift and through everything I have learned to cherish the moments in life, the simple things that happen each day that can go unnoticed in our busy lives. 

I have learned to give yourself to others but to find a balance as well. You can not give your best self unless you take care of you too. 

It's OK to give yourself a break sometimes. Rest is just as important to the success of our health and life!

In Loving Memory of Robert M. Stakeley




Sunday Night around 9:30 my father in law Robert M. Stakeley took his last breath and ended his three month battle with stage four Merkel cell carcinoma, skin cancer.
Although these last few months have been hard, we have enjoyed spending time with him.
He was such a loving husband and father, gentle, patient, hardworking, and kind hearted man.
He will be greatly missed.
Gone from our sight but forever remembered in our hearts...

We will be holding a private family only viewing and funeral this week at:
 Kyper Funeral Home 2702 Mt. Royal Blvd. Glenshaw, PA 15116 







During his time spent in the hospital he would often sing over the phone to his wife and my Mother-in-law Lorraine while she was healing in her care center from her broken leg.

This is a memory in video now that I am so thankful that I was able to preserve. 

Dad we hope you are listening to Elvis and eating all the spaghetti and meatballs
 you want in heaven. XOXO

Corned Beef, Cabbage and The 21 Day Fix!

Corned Beef and Cabbage is one of my most favorite meals on this planet!  Most people make it only once a year on St. Patrick’s Day.  Not me, this is a staple in our home ALL YEAR ROUND!!!
Here’s how I can stay loyal to my 21 Day Fix meal plan AND still enjoy St. Patrick’s Day?
Here’s the secret…it’s those cute (not so) little containers!!!

Corned Beef, Cabbage and The 21 Day Fix!

Here is what you’ll need:
1 piece of LEAN corned Beef
I use Mosey’s brand from Costco…it’s by far, the best I have ever tasted.
Organic Red Potatoes (Trader Joe’s) cleaned and left whole.  If large, then slice in half.
Red potatoes have slightly less calories and carbs than traditional white potatoes.  However, the skin of red potatoes contains two to three times more antioxidant benefits.  Plus, I think they’re tastier!
1 whole cabbage,trimmed and  quartered. eating the core intact to hold the cabbage together.
3-4 medium sized yellow onions.  Skin peeled and left whole.
If larger than halve the onion, cutting lengthwise to keep the root intact in order to hold it together.
5 carrots, peeled and cut into 3-inch pieces. 
There’s nothing fancy about cooking a fabulous corned beef dinner.  Here’s the foolproof method I’ve been using for years and my family LOVES IT!
Step 1….BOIL EVERYTHING IN PLAIN WATER!!!
Step 2—ENJOY!!!
That’s it…I swear!
For the corned beef:
~Place it in a pot of cold water and bring to a boil.  Once it’s at a rolling boil, lower it and simmer for 3 hours-3.5 hours depending on the size of the meat.  If there is a spice packet included, use it.  If not, feel free to throw in some fresh garlic, pepper and mustard seed.
~1 hour before the meat will be finished, fill a separate pot with water and boil the cabbage, and onions.  Again, bring to boil then simmer for the remaining time.  I like to keep the cabbage separate this way, it won’t effect the meat.
~20-30 minutes before place the potatoes and carrots in the pot with the meat.
~When the meat is done, place it on a platter or cutting board, cover and let rest for 10 minutes.
TIPS ON SLICING 
~Trim any remaining fat and place it fat side down.
~Look for the grain pattern of the meat.  This is the pattern of visible long muscle fibers that run parallel to each other.
~On a slight angle, thinly slice your meat AGAINST the grain.
**Slicing against the grain allows you to cut muscle fibers so that they are very short and no longer touch. **If you leave muscle fibers long and intact, they remain strong and very hard to chew.

Hey Sara..... Where have you been?

Well.... Let me first start by saying this New Year started out a little rocky!! I'm still here but I have had so much going on.




The last two months have been a bit nuts for my Husband and I !! 
To say the least... but I wanted to thank you all for your thoughts,support and prayers.
My Father in Law was taken to the hospital on January 8th because he was feeling weak and had a hard time getting out of bed to even eat. After being admitted to the ICU because his heart rate he remained there for two days and was transferred to a room. He was then scanned and tested because of a mass they found under his left arm. This mass came back as cancer and since it was left untreated had spread throughout his entire body except his brain. Merkel cell carcinoma is a form of skin cancer and it affects people over 50. It is aggressive form of cancer and spreads rapidly if not treated. 



My Father in Law is not one to complain and it was unnoticed for about 3 months we think. He is being treated with radiation to lessen the pain and reduce swelling. He has received 3 treatments of chemo that ended on Saturday the 17th February. He is doing well and is in good spirits. He is currently still in the ICU because of his breathing and will be transferred to a room in the hospital once his oxygen levels are stable. 

Brian and I have been taking his mother to and from the hospital and Saturday night after a long day in the ICU we took his mother home. We always wait to make sure she gets into the house and she flashes the light when she is in and settled. Well Saturday we waited and no light was flashed. Brian checked the front door and then ran to the back of the house where he could hear his mother yelling that she had fallen. Once inside the house she was laying on the floor.... she had fallen down the stairs. 


I told Brian not to move her and I called 911. Once the ambulance came they assessed her and transported her to the hospital where we had just left my father in law. 


I sat in the waiting area in disbelief that this had just happened. 
Both Parents in the hospital and I prayed that she was ok.

They did a full body scan since she had a bump and bruise on her head cuts and scrapes all over her body and complained of leg pain.
They had cut her jeans on her left leg and her femur bone had broken through the skin of her leg broken into pieces from what we could see on the X-ray. She was then moved to another hospital about 10 min away to be seen by a specialist to do the surgery. 


At around 4:30 am we were told that they would do surgery to stabilize the leg but try to fix the bone as well. Around 7:00 that morning she was moved to surgery and with success they were able to fix the leg. 

About two week later Brian's father was still in the ICU and a new issue arose his lungs were failing. The treatments for the cancer had to stop because he was too weak and required too much oxygen to leave the ICU.  With his diagnosis for the cancer considered incurable and the cancer throughout his entire body except his brain we had to make the tough decision to have him treated for comfort and moved to hospice for end of life care. The doctors couldn't give us an exact time but thought at most he would live three days once he was off the oxygen. 

Hospice Care is a wonderful place and the treatment he received was amazing! I really give so much credit to the Dr's and Nurses that work in this line of care. 
My Father in law spent 10 days in hospice care and his medication had balanced out and he was requiring little to no oxygen. The stress from the ICU was gone and he was feeling comfortable. We had good days and bad but he is a fighter. 

Since he became stable he had to be moved out of hospice acute care and moved to assisted living. He is still bed ridden and considered on inactive care. He is weak and showing signs of confusion. He is being treated for pain and comfort management. 

My Mother in law is still being treated in a rehabilitation center close by and we are hoping that she will be cleared to be a little more mobile after he doctors visit later this month. 


So Long story short both are stable and resting.... 


In times like this we are truly blessed with our friends and my family for their support. 
Brian and I are doing everything we can to help, visit and be with his parents. 
Thank you to everyone for your support and prayers. It really means so much to us and our family.

COD WITH MANGO SALSA

It's Friday and during Lent I like to get a little creative with fish!! I have to admit that all of the Fried Fish signs EVERYWHERE can be very tempting for me. Wings and Fried Fish are my weakness!! However I would rather eat a meal that doesn't send me to the bathroom. Good on the way down and not on the way out "if you know what I mean" .... ok TMI!! 
I love this salsa over any white fish or even salmon. It is also a perfect topping for grilled chicken! 
I will serve this with a side of quinoa or brown rice and a veg to complete this meal!

(Makes 2 servings, 1 fillet each)
• ¼ cup water
• 1 Tbsp. extra-virgin olive oil
• 1 tsp. fresh lemon juice
• Sea salt and ground black pepper
(optional)
• 2 (8 oz. each) raw cod fillets
(or any white fish fillets, like halibut)
• Mango Salsa (see following recipe below)

1. Preheat oven to 350° F.
2. Combine water, oil, and lemon juice in an
ovenproof dish or casserole with a cover; mix
well. Place cod in mixture and turn to coat all
sides; season with salt and pepper if desired.
3. Bake cod, covered, for 20 to 25 minutes,
basting at least once with juices.
4. Top cod with Mango Salsa and serve.


MANGO SALSA

(Makes 2 servings, ¼ cup each)
• ½ medium mango, peeled, diced
• 2 Tbsp. finely chopped onion
• ¼ medium tomato, chopped
• 1 tsp. finely chopped jalapeño
• 1 fresh cilantro sprig, chopped

1. Combine mango, onion, tomato, jalapeño, and
cilantro in a medium bowl; mix well.
2. Serve with fish above or chicken.

Chocolate Shakeology Bark

Oh hello glorious snack idea!!!!
I am a huge fan of sweet treats and I was totally needing something after dinner and shakeology chocolate, much to my surprise came to my rescue!!!

I lined a bread pan with tinfoil so that I could remove the bark and just fold it up in the foil like a REAL chocolate bar.

Chocolate Bark Base- Melt 1 Tbsp coconut oil in a bowl.  Slowly add in 1 Scoop of  Chocolate Shakeology and stir until well mixed.  Pour into the tin foil lined pan then freeze until hard.  Store in airtight container in the fridge.

Totally crushed the sweet fix and it counts for 1 red and a 3 spoons if you eat the entire bar!!


 I am totally adding peanut butter next time but you could add crushed nuts, fruits, shredded coconut or even sea salt!! You will have to update your cups accordingly to what you add!! 

The possibilities are endless!! Enjoy!
