21 Day Fix Strawberry Frozen Yogurt

Strawberry Frozen Yogurt
Want a healthy treat that doesn't contain a precious Yellow Container for your 21 Day fix meal plan.... You have to try this!

1 Purple container of frozen strawberries
1/2 Red container of plain greek yogurt
The juice from 1/2 lemon
1 tsp. honey (from List B page 15 fix book) *Eliminate in Fix Extreme

Add all these ingredients into a food processor and run until it is a smooth consistency. Enjoy immediately!

Vegetable Quinoa Soup

Soup season is in full swing and I am loving every second. On Monday, I made a big pot of Vegetable Quinoa Soup and I can’t get enough. This healthy soup is just what I needed and it has saved the day for us with lunches or a late meal with my father in law in the hospice care. 
It is loaded with veggies-carrots, celery, zucchini, yellow squash, tomatoes, and green beans. I added quinoa to “beef” it up, don’t worry, there is no beef in the soup. This soup is vegan and gluten-free…and one of my favorite vegetable soup recipes.

Yield: Serves 6-8
A healthy and hearty vegetable soup!

ingredients:

2 tablespoons olive oil
1 medium onion, diced
2 cloves garlic, minced
2 medium carrots, chopped
2 celery stalks, chopped
1 small zucchini, chopped
1 yellow squash, chopped
1 1/2 cups fresh green beans, broken or cut into 3/4-inch pieces
1 box (32 ounces) Organic Low Sodium vegetable broth
1 (15 ounce) can diced tomatoes
2 bay leaves
1 teaspoon dried thyme
1/3 cup chopped fresh basil
2 cups cooked quinoa
Salt and black pepper, to taste

directions:

1. Heat the olive oil in large, heavy-bottomed stockpot over medium-low heat. Once hot, add the onion and cook until tender, about 5 minutes. Add the garlic, and cook for 2-3 minutes. Add the carrots, celery, zucchini, yellow squash, and green beans and continue to cook for 4 to 5 more minutes, stirring occasionally.
2. Add the vegetable broth, diced tomatoes, bay leaves, thyme, and basil. Reduce the heat to low, cover, and cook until the vegetables are fork tender, approximately 25 to 30 minutes. Stir in the cooked quinoa and season with salt and pepper, to taste. Serve warm.
Note: To cook the quinoa, rinse 1 cup quinoa under cold water. Add quinoa, 2 cups water, and a pinch of salt to a medium saucepan and bring to a boil over medium heat. Boil for 5 minutes. Turn the heat to low and simmer for about 15 minutes, or until water is absorbed. Remove from heat and fluff with a fork.

Hearty Hamburger Potato Soup

Eat clean Hamburger Potato Soup

Ingredients: (Servings 8-10)
2 Tbsp. EVOO (Extra Virgin Olive Oil)
1 Yellow onion
1 Red Pepper
2 Garlic Cloves; Minced
1 1/3 pounds Organic Ground Lean Beef
2 Tbsp. Organic Tomato Paste
2-32 oz. Organic Beef Stock (Homemade or store bought)
3-Large Russet Potatoes
1-8oz. Package Organic Frozen Corn Kernels
2 Tbsp. Fresh Parsley
1 Tbsp. Kosher Salt
½ tbsp. Fresh ground pepper
 Preparation:

  1. Place large pot onto cook top. Drizzle 2 Tbsp. EVOO into bottom of pot. Heat EVOO on medium heat.
  2. Add onion, red pepper and garlic to the pot. Sauté for 3-5 minutes. Season with a pinch of season salt and black pepper.
  3. Add ground beef to onion mixture. Season with remaining kosher salt and pepper. Cook until No PINK.
  4. Skim the beef and onion mixture with a spoon to remove excess fat drippings
**If you use a 92% lean beef there is less fat to remove. Use a spoon & disregard fat drippings
  1. Add Tomato paste to beef onion mixture. Cook for 5 minutes.
  2. Add Beef Stock. Cover pot and bring to a boil. In the meantime, peel russet potatoes and slice potatoes into “thin moon shape”.
  3. Reduce to a simmer; Add potatoes. Simmer for 10-15 minutes until potatoes are soft.
  4. Add frozen corn, fresh parsley, and taste the soup. Add more salt and pepper if needed.

Here are a little stats!  In just 3 years I went from a over worked skin tech working at a spa 60+ hours a week I was miserable about my body and my  health to being in the best health of my life.  From a two person family income with no wiggle room to doubling my income from home only working 20 hours a week outside the home. 
I went from being a coach with no qualifications behind my name to a 3 Star Diamond Beachbody Coach.  I am already on track to be an Elite Coach for the year and I am currently the #124 Beachbody Coach in the entire network of 138,000 coaches.  


 I am a wife to my Husband Brian that I met 15 years ago, married for almost 5 years!! 
 And I am totally a real person!  
I have a messy house, I have life issues that come up, I some days don't get enough sleep and I sometimes have more than 1 glass of wine! I am just like you!  
Not perfect by any means.  I have just done the right activities with consistency over time to produce results!  
This my friend, I plan on teaching you if you join my team!

Healthy ZUPPA Toscana!


I have been on the hunt for a NEW Soup Recipe! 
I love Zuppa Toscana but I thought for sure I would NEVER be able to have it again with the heavy cream and milk used in the recipe.... 
Well I found this!!! YAY!!

Ingredients
1 lb. chicken or turkey sausage (mild or spicy, based on preference)
1 large onion diced
1 T. minced garlic
8 cups organic chicken broth
4 medium red potatoes, cubed
1 can coconut milk
1 bunch kale

Instructions
Brown sausage in large saucepan.
Add chopped onion and garlic and saute for 2-3 minutes.
Add chicken broth.
Add cubed potatoes to saucepan. (No need to peel.)
Bring to a boil, then turn to low and simmer until potatoes are tender.
Meanwhile, wash kale and remove thick stem. Tear into bite-size pieces.
Add coconut milk and warm through, but do not allow to boil.
Stir the kale into soup just prior to serving.
Notes
If you like it extra spicy, add 1 tsp. crushed red pepper flakes.


**** I might try browning the meat and adding this to the crock pot on low 6 to 7 hours next time too!! I will add the coconut milk and kale about an hour before serving!

Healthy Banana Protein Bars

Need a Sweet Treat?? I have a LIST of healthy bars but I was looking for something a little different! I had some bananas that I needed to use so I thought I would give this a try! 
This recipe was posted by one of my coaches in my challenge group 
and I wanted to share it here with all of you!! 
Super Easy!! And Really Good!! 



Healthy Banana Protein Bars

1 cup of old fashioned rolled oats
2 tsp. ground cinnamon
1/4 tsp salt
2 Bananas
1/2 cup cranberries
1/2 cup chopped walnuts

1. Preheat oven to 350
2. Combine oatmeal, cinnamon, and salt in a bowl
3. Add in the cranberries, bananas, and walnuts
4.  Coat a small baking pan with cooking spray
5. Spread into the pan and flatten and bake for approx. 15 minutes
6. Cut into 8 servings
