We are headed into the end of the year and I wanted to reach out to you as my follower and make sure that you are set up for success for 2015. I have been running challenge groups for over 3 years now and I feel that they are the secret sauce, a key factor in having success with in home fitness and nutrition!

What is a challenge group?

So the challenge group is a 30 day group. It's all done through a closed online facebook support group. So only the members of the group can see what is being posted.What I do is help you customize your health and fitness goals to meet your needs. Then I help you choose the best Beachbody workout to get there based on your ability level. You replace 1 meal a day with shakeology for the next 30 days to give your body 1 meal that is supercharged with ingredients that will give you natural energy, cravings will be curbed, you will stay full for at least 3 hours and its equivalent to 6 salads in one meal. Then, I am going to teach you how to plan the other meals of the day. I will help you create a customized meal plan, give you recipes, snack ideas, tips, motivation and keep you accountable.
Every day I post in the challenge group your daily mindset tip or post. You check in and rate your day and read what is posted. We all keep each other accountable!
I am going to address the emotional eating, eating out at restaurants, how to handle the temptations, cheat meals, body image and more!

New Year, New you Challenge!!

In the past, have you ever made a “get healthy & fit” resolution, only to burn out a month or two in? Have you started out strong and inspired, and then lost motivation? It’s not at all uncommon! But I'm here to HELP you make THIS YEAR’S resolution STICK!!!

Part of the reason people burn out so fast is because they set themselves up for failure from the start. I know that sounds harsh, but hear me out!While it is absolutely wonderful and commendable that so many people resolve to exercise and eat healthier, they often times put too much pressure on themselves and try to change everything at once, without taking any time to adjust. They swiftly become exhausted from their new lifestyle and go back to their old ways. Believe it or not, simply making new DECISIONS is tiring in itself, let alone breaking out of your comfort zone and eat well and exercising!

Here are my TOP TIPS for sticking to that New Year’s Resolution YEAR ROUND!

  • Make it a LIFESTYLE change, not a diet. The moment you tell yourself you "can't" have this or that, is the same moment you confine yourself to the drudgery of a "diet". If that is something you can picture yourself doing for all eternity, than by all means go for it. But be honest with yourself. Will you be able to resist eating cake or pizza forever? Probably not. So rather than condemn yourself to chicken and asparagus forever and always, make a change that you can maintain for the LONG TERM. Think about all the healthy, delicious foods you CAN have and the treats that you CAN have on occasion! Being healthy and fit is a MARATHON, not a sprint. Make it a lifestyle that you can maintain for the long term, otherwise you will gain all the weight back PLUS MORE.

  • Transform at your own pace! Just because someone else is able to eat chicken and broccoli every day or do two-a-days at the gym, doesn’t mean you have to do that too! If you don’t like chicken and broccoli, there are other options! If you don’t have time to go to the gym twice, go once! Don’t follow cookie cutter routines that you hate… create something you enjoy so that it will LAST!
  • Set realistic goals. Things like drinking more water each day, cutting down your 3 sodas-a-day to 1-a-day, including more vegetables at dinner, increasing the weight you lift on a particular exercise, or adding an extra ten minutes to your cardio are all attainable, healthy goals. Once you succeed at these, make new ones and continue to build and expand on the solid foundation you’ve lain.
  • Challenge yourself, don’t overwhelm yourself! Just because the fitness models you see in the magazines can bench or squat a certain amount of weight, doesn’t mean you will be able to do that too. It took these people months and years of training to get to the point they’re at. Build up at your own pace!

  • Do a little research. One of the best ways to stick to a healthy eating plan or exercise schedule is to keep it interesting! There are SO MANY fantastic, free resources for recipes and workouts! Try googling "Clean eating *fill in the blank favorite food*". Check out websites like Team Beachbody for workouts, nutrition plans and a support network! Don't be afraid to use your Google search engine to find motivating bloggers & nutritious chefs!
  • Be patient. It took more than a day to put it on and it’s going to take more than a day to take it off. Transforming your lifestyle and your physique will take time. The sooner you recognize and accept this, the better! You WILL have set-backs and losing weight/getting fit WILL take time. You will occasionally eat something unhealthy, you will miss a workout, you will stumble, you will make mistakes… you’re human! Nothing worth having ever comes easily… if it WERE that easy, everyone would be in shape! Know that you are only a failure if you QUIT. So don’t quit! You will regret it in the long run!

  • Be positive.  Instead of beating yourself up over mistakes, try doing the opposite. For example, if you slip and eat a slice of cake, don’t tell yourself cruel things like “I’m a pig” or “I can’t do this”. Instead swap those negative affirmations out for positive mantras like: “I can do this”, “I had a treat and now I’m getting back on track”… and MEAN IT!

  • Start exercising! The trick is to find something you enjoy so that you will actually DO IT. There are SO MANY options, some of which include: weight lifting, pilates, yoga, cross fit, kickboxing, mixed martial arts, powerlifting, olympic lifting, jogging, cycling, spin, zumba, interval training, jazzercise, jumping rope, dancing, running, hiking, mountain climbing, swimming… the list goes on!!  Some of my favorite and most motivating workouts are 21 DAY FIX (meal Plan and 30 min workouts) , TurbofireChalean Extreme, 30 minutes or less a day P90X3, and the NEW Insanity MAX30 !!!

  • Surround yourself with people who support you. There is nothing worse than having negative and/or jealous people around when you are trying to make a healthy, positive change to your life. There WILL be people you THOUGHT were your friends try to drag you back to your old, unhealthy ways. They might tease, taunt or grill you for your new habits. Some people can’t handle change. If you find that your healthy habits are being mocked or demeaned by those around you … ask yourself why your ‘friends’ would want you to go back to being unhealthy. Do they not understand the sudden change? If so, explain to them why you’re doing it… Or, are those friends just jealous? If so, CUT THEM OUT OF YOUR LIFE!

  • Plan ahead! If you fail to plan, you plan to fail. Prepare your meals and workouts in advance. Always keep workout clothes, a water bottle and protein powder with a shaker cup in your car so you never have an excuse not to hit the gym. Always carry an apple, a serving of almonds in a ziploc baggy and a packet of tuna with you.. that way you never have an excuse to hit the vending machines or burger joint!

You can do anything you set your mind to. 
Believe in yourself, don't give up and you will get there!!

Goat Cheese with Pistachios and Cranberries


So here we are the day before Christmas Eve!! 
Now I consider myself pretty lucky that I have a family that will NOT turn their nose up to healthy holiday eating.   
Sure we have holiday food traditions and even baked goods, but we always try to have options as well. 
Now I love to cook and this year I am headed to my Dad's for Christmas eve and my Mothers for Christmas day! 
Being in charge of the appetizers can be easy with a veggie tray or hummus, but I wanted to make something that was festive and YOU all know I love cheese! 
Goat Cheese is considered "clean" and if I watch my portions and make sure the crackers are clean this can be a really EASY and fun Holiday Appetizer!

Goat Cheese with Pistachios and cranberries
Holiday Appetizer 
  
2  Tablespoons roasted pistachios, chopped
2  Tablespoons dried cranberries, chopped
1 8- to 10- ounce log fresh goat cheese
Clean Crackers (whole foods) or bread, for serving
On a large plate, combine the pistachios and cranberries.
Roll the goat cheese in the fruit-and-nut mixture to coat. 
Serve with the clean crackers or bread.
Serves 8.
*TIP > You can make this up to two days before you serve it!! So I can make this today and it will be perfect for the next two days!! I got my goat cheese from Costco's and it is packaged with two nice size logs for the best price that I found! 

I lucked out this year and didn't have to make the meal!! But here is a great option if you are making  a salad!!
I love to keep with the red and green theme..... I guess!!

Strawberry Spinach Salad 
 
This salad is festive with it's red and green color and very tasty!! It is one of my family favorites!!


Strawberry Spinach salad Ingredients:
1/2 cup all natural poppy seed dressing 
2 tbs. toasted almonds
2 tbs. of minced onion
2 bunches of spinach, washed, dried, and torn in pieces
2-3 cups of strawberries, sliced with stems removed
OPTIONAL: 1/2 cup of slivered almonds, crunchy chow mein noodles, or feta.

Slow cooker Cashew Chicken

Eat Clean Cashew Chicken 


Ingredients:

2 lbs boneless, skinless chicken thigh tenders or chicken breast tenders
1/4 cup whole wheat flour
1/2 tsp black pepper
1 Tbsp oil
1/4 cup soy sauce
2 Tbsp rice wine vinegar
1 Tbsp tomato paste
1 Tbsp raw sugar
1 garlic clove, minced
1/2 tsp grated fresh ginger
1/4 tsp red pepper flakes
1/2 cup cashews

Directions:

Combine flour and pepper in large Ziploc bag. Add chicken. Shake to coat with flour mixture. Heat oil in skillet over medium-high heat. Brown chicken about 2 minutes on each side. Place chicken in slow cooker. Combine soy sauce, vinegar, tomato paste, sugar, garlic, ginger, and pepper flakes in small bowl; pour over chicken. TIP: if you like extra sauce just double the ingredients you combined above! 
Cook on LOW for 3 to 4 hours. Add cashews and stir. Serve over brown rice. 
Makes 4-6 servings.

Make boring Chicken POP!! Hummus Crusted Chicken!

We Eat a TON of Chicken and Chicken can get boring!! 
Make your Chicken POP with this easy Hummus Crusted Chicken Recipe! 
You can use store bought hummus or create your own homemade with this amazing recipe one of the coaches on my team created below!! 


Hummus Crusted Chicken



Smother some boneless, skinless chicken breasts with hummus (about 1 cup for 4), then top with a squeeze of lemon juice, a sprinkle of balsamic vinegar, chopped fresh rosemary, and lemon slices (optional). Bake at 450° until hummus is golden brown and meat is cooked through, 30 to 35 minutes. 

Season with himalayan sea salt and black pepper to taste and serve immediately.




Homemade Hummus:

There are only a handful of ingredients to make amazing hummus and here are a few pointers I learned.
1. NO CANNED CHICKPEAS please! Buy a 1 pound bag of chick peas/garbanzo beans they are cheap and yes Walmart carries them.
2. FRESH IS BEST!
3. GOOD QUALITY OLIVE OIL
4. SEASON GOOD. DON’T SKIP THE PEPPER.
5. DON’T DUMP THE REMAINING CHICK PEA WATER! YOU WILL NEED IT!
6. SERVE IT WARM. IT TASTE SO MUCH BETTER.
7. BLENDER WORKS GREAT TO GET THE CREAMY CONSISTENCY.

Ingredients:
2 Cups dried garbanzo beans, Soaked overnight; drained. (Or follow quick cook method on back of packaging)
1/2 cup tahini (this is a sesame paste) ***DO NOT OMIT THIS
Homemade Hummus, Chicken recipe, eat clean chicken breast, hummus crusted chicken, 21 day fix dinner, Sara Stakeley, Sarastakeley.com, easy chicken baked, easy recipe, busy mom, working women,1/4 cup EVOO (extra virgin olive oil), a little more for topping
1/4 cup fresh lemon juice (about 1 lemon)
2 tsp. cumin
3-4 cloves of garlic, peeled.
1 small dried or fresh red chili pepper. (I had a dried Chinese red pepper that I infused in warm water to plump it back up).
1 1/2 tsp. Kosher salt to taste.
Preparation:
Bring garbanzo beans (chickpeas) and 5 cups of water to a boil. Reduce heat and cook chick peas until tender about 1 hr-1 1/2 hrs. Drain chickpeas but reserve the remaining cooking liquid. Transfer all but 1/4 cup of chickpeas to blender. Add tahini, EVOO, Lemon juice, cumin, garlic, red chili, and Kosher salt. Blend. Puree the mixture until smooth. Add reserved cooking liquid and puree until a “whipped” or “Airy” like consistency. That should take about 3-5 minutes. Taste!
Transfer hummus to a serving dish. Top with the remaining 1/4 cup of chickpeas, drizzle with more EVOO, and sprinkle with parsley and kosher salt.

My 3 Year Anniversary as a Team Beachbody Coach


As I sit here today I can not imagine my life without this business! It's crazy to think over the last three years how my life has been blessed as a beachbody coach. 
Never did I think that a P90X purchase before my wedding and dusting it off and finally finding motivation to do it in a challenge group would lead me to this!

I have been able to change my health, my finances, my freedom and surround myself with some of the most motivating people I have ever met! 
Brian and I have been able to take vacations without using a credit card, pay off debt, and set BIG goals together for our future! 

This past 3 years I have learned that my success depended on me helping other people succeed. Whether it was through losing weight, or being healthier, to Financial freedom.

Money, vacations, debt payoff… all that set aside, becoming a Beachbody Coach has given me a true passion.  A real outlook on my life and where I want to go and what I want to be.  I have learned so much about myself and others over the last 3 years.  I have created relationships with my coaches and my challengers alike that are relationships that I can keep with me forever.  I have some of the most amazing friends in this business, and my coaches: Team Evolve, they are my family.  There’s more to this business than the glitz, the glam, the money… it’s about life lasting relationships, finding your true passion, and reaching to help others and meet NEW people every single day and I am blessed to have this opportunity and this life.

I always felt that there was something I could do that had a purpose, but never really knew what that was. That purpose was to help others. Everything in my life has led me here, and I wouldn't take back 1 single bit of it, mistakes, struggles, the whole enchilada.
