This tip can curb over eating!!

Think back to your last meal. Was it pleasant and leisurely? Or were you rushing to wolf it down before hitting the morning commute?




How often have you found yourself racing through meals on the go, or watching TV while mindlessly shoveling forkfuls of food into your mouth? 

The common sense advice, to slow down eating by placing your fork on the plate between bites is actually a very useful tactic for reaching your weight loss goals. Slowing down can be very good not only for your digestion and your table manners, it can help prevent overeating. It forces you to relax and pay attention to chewing the food you already have, and allows you to notice more easily when you begin to feel full. 

How long do you usually take to finish a meal? 

If it's 10 minutes or less, you could be eating twice as much as your body needs without even knowing it! The body takes 20 minutes before it alerts the brain that it has had enough.That's because it's not your stomach reaching capacity that tells your brain to stop, it's food reaching your intestines that triggers the signal to put down the fork. Eating quickly can cause you to eat dozens of extra mouthfuls of food before your brain gets that important message. 

Research shows that eating slower results in eating less and still feeling satisfied. A study from the North American Association for the Study of Obesity had overweight subjects eat a meal at different speeds, always eating as much as they wanted. In one meal, the test group ate at their normal rate; in another meal, for the first half of the meal they could only take a bite of food when they heard a beep, and for the rest of the meal they could eat whenever they wanted; and in a third meal, they had to eat only when they heard a beep for the entire meal until they had eaten as much as they wanted. Invariably, the people ate less during the slower, meals directed by beeps.

Today, we challenge you to put down your fork between bites. It sounds like a no-brainer, but have you ever actually tried putting your fork down between every bite, chewing your food, and not picking up your fork again until you've swallowed the previous bite? Try it today and pay attention to how it feels. If you're eating food with your hands, like a wrap or a slice of pizza, put the food on the plate while you chew. Think about how many calories you could potentially save at every meal just by using this technique.

Got DRY CHICKEN? Finally I have figured it out!! Moist BAKED Chicken!! YAY!!

The secret to juicy chicken breasts? Bake for a short time at a high temperature. Baking for 30-40 minutes at 350 degrees F will yield dry meat. But baking for just 20 minutes at 450 degrees F will result in delightfully juicy chicken breasts, every time.
I have been searching for this for over 2 YEARS!! SO GOOD !!

Easy Chicken Baked



Makes 2 servings

Total time: 30 minutes
Prep: 10 minutes
Bake: 20 minutes
Ingredients
2 raw boneless, skinless chicken breast halves (about 1 lb total weight)
Olive oil cooking spray
1/2 teaspoon kosher salt
1/4 teaspoon Freshly ground black pepper
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon dried oregano
1/4 teaspoon paprika

Lemon garnish optional

Directions
1. Preheat oven to 450 degrees F. Line a baking dish with foil and spray/misto it with olive oil nonstick spray.
2. Spray both sides of each chicken breast half with olive oil spray and sprinkle with the seasonings. Bake for 10 minutes, flip to the other side, lightly spray again and bake for 8-10 more minutes, or until juices run clear when pierced with a fork (it’s fine to make a small slit in the thickest part and see if it’s done!).
Sometimes I get really large chicken breasts at the store – total weight 2 pounds – in this case I find that baking them 15 minutes on each side is just right. Of course, the best way to make sure they are done is to use an instant-read thermometer. It should read 165 degrees F when inserted into the thickest part.
3. Transfer to a platter. Loosely cover with foil and allow to rest 5 minutes before slicing. Resting is key!!

Peach Cobbler!! YUMMY and Clean Summer Dessert!!

What is better than Cobbler in the Summer time!! 
Eat Clean Grilled Cobbler!! 
YUMMY!! 

Ingredients
1 cup coconut oil, melted down *save some for grilling!
1 teaspoon cinnamon sugar
1 1/2 tablespoons sucanat sugar Organic 
Pinch salt
4 ripe peaches, halved and pitted
Mint leaves, for garnish

I can't do Cow's milk so I LOVE Coconut Milk ice cream!! 

Directions
In a small bowl add the Coconut oil and stir until smooth. Add the cinnamon sugar, granulated organic sugar and salt and mix until combined.

Heat grill to high. Brush peaches with remaining oil and grill until golden brown and just cooked through.
Top each with mint leaves ~ optional !!

Now we are headed into a Holiday WEEKEND!! And that can be good if planned for or BAD if not!! So today I am cooking to plan and prep for the weekend!! 
I have a party on Saturday and SUNDAY!! 
I was asked to bring a dessert for the one party and I am not sure if you follow me here or not but I feel as if this was a set up!! LOL!! 
I am not a WHITE SUGAR lover so I will bring fruit!! HA HA!!

Shakeology Nutella
21 day fix approved Shakeology "Nutella"




Chocolate Shakeology "Nutella" Fruit Dip

1 scoop Chocolate Shakeology
1 cup unsalted almonds
1/2 cup honey
1 cup dried plums (prunes)
1 tsp. vanilla
Salt to taste
Fruit Kabobs or sliced!!

In a blender, blend almonds and honey until well mixed. Then, while blending on a low setting, add the dried plums (prunes) one at a time into the mixture. While the blender is still going, slowly add the scoop of Shakeology, then the vanilla and salt. Blend as well as possible until mixture appears thick and creamy. 
I tried this in the Magic Bullet NO GO!! You will need the food processor!! 
Trust ME!! 
Serve chilled with fruit 
Makes 10 servings. 
About 1/3 cup each.


Every ingredient included has a low GI level. Very delicious, and full of antioxidant, nutrient rich super-foods. Great chocolate dip for fruit!!
SOOOOO GOOD on Strawberries!! I can't wait for Sunday to cut up and try the pineapple with it!!

Fruit Dip


Cinnamon Almond Fruit Dip

Ingredients:
  • 1 cup ricotta cheese (recipe here)
  • 2 tbsp almond butter
  • 1/2 tsp cinnamon
  • 1 tsp raw honey
  • 1 tsp low fat milk
  • Fruit of your choice, cut into bite size pieces
Preparation:
  1. Place all of the ingredients except the fruit in a food processor and process until smooth. If the dip is a little too thick add another teaspoon of milk.
  2. Serve with fruit and dip in!
Makes about 1 cup.

NEXT!!! I have a party on Saturday and I will work at the Spa so I will make this today and send Brian with the goods!! I will meet him after work but this salad is always better the next day anyways!! 
TIP: I will wait and cut up the tomatoes and fresh basil and parsley tomorrow so they don't lose color!

My favorite Summertime Salad

Tomato, Basil and Green Onion Quinoa Salad with Fresh Lemon Dressing

3 cups cooked quinoa
1 1/2 cups quartered grape tomatoes
1/4 cup chopped green onion
1/4 cup chopped parsley, preferably flat leaf
1/2 cup chiffonade (thinly slivered) fresh basil leaves
Juice and zest of 1 lemon
2 Tablespoons extra virgin olive oil
1/2 teaspoon honey
pinch of kosher salt and a few grinds of black pepper



Combine the quinoa, tomatoes, green onion, parsley and basil in a medium bowl until well mixed. In a small bowl combine the juice and zest of the lemon, olive oil, honey, salt and pepper and whisk to emulsify. Pour the dressing over the quinoa mixture and stir gently to combine. Allow the flavors to blend for about 30 minutes. Serve!!

Quinoa is packed full of protein and can replace a greasy burger or hot dog anyday!!

Paleo Paloma

Skinny of course!! 

Last weekend, I discovered my new favorite drink that did not give me the drunk munchies or a hangover. It’s the Paleo Paloma! 
Most bars I've been to do not know what this is so simply ask the bartender for clear tequila with soda, splash of grapefruit juice and extra limes. The real NorCal doesn't have any grapefruit juice. They may squeeze the limes for you, but otherwise, you can just do it yourself. It’s easy. 
I ordered  Don Julio  but feel free to order what you like. Also can be good with vodka!! 
I had more than I will admit publicly on this blog. Tequila is one of the few liquors that is not made from a starch or grain. It is made from the Agave plant (which is probably why I've  always liked it so much). Combined with the lime and grapefruit, it does not cause your blood sugar to spike which causes the late night pizza cravings or Primanti Brothers here in PA and tastes refreshingly good.

Beach wedding!! My Little Sister got married!!

We had a awesome time in the Isle of Palms in SC. We drove and rented a BIG Rig Wrecker of a Yukon!! We needed the space for our things and the wedding stuff we had to bring. I spent the week at home just adding can't live without food items to my box... You never know what you can and can't find in another state!! And you all know that food is VERY important to me!!

Road Trip Cooler

I took my infused olive oils and vinegars, my Braggs, my sangria mix, Shakeology and a bunch of seasonings I can't live without!! The area was great and had many clean eating choices to chose from, but with a big family in one house it can save you time and money to cook at home!! 
I made my quinoa salad for the road and for the house. We packed for the road and only had to make 1 stop before reaching my Sisters house in Charlotte. Pretty good considering how much water I drink!! 
When Jerri and I made the trip a few weeks before I made note of the best rest areas to stop. We where able to get the Pens game over my app for I heart radio as we went through the hills of WV and this nail biter helped to make the trip a faster one!! 
I packed sparkling water and coconut creamer since this was not on the road!! I love Starbucks but come on!! Get with the times!! Soy Milk is so 2010!!!  

We arrived late on Monday night and sat around for a bit before we went to bed to start the day fresh in the AM headed to the beach!! We left my Sisters house around noon and drove the 3 hours to the beach. We arrived at check in time and headed for our beach retreat!! My Mom booked the house and it was AWESOME 908 Carolina Blvd is a perfect house for a BIG family!! Many rooms and a big kitchen. It had a Hot Tub and a salt water pool. All landscaped and perfect for dogs to run without a leash since it was all fenced in!!

We unpacked and decided to get pizza for dinner... Now we have a gluten allergy in the family as well as a vegetarian!! Plus we all Eat Clean!! So Google to the rescue!! I googled clean gluten free pizza and up popped Mellow Mushroom!! The price is a little high but this Pizza with wheat crust and organic sauce and veggies was worth it!! Plus Chris my brother in law said the gluten free was good too!!

It was so much fun to be with family under 1 roof!! My Sister Kris lives in Columbus and my Brother is here in Pittsburgh but he works crazy hours so we see him at Holidays and family dinners. It was nice to be able to spend the week with them all. 

we can't have kids I like to SPOIL my Niece and Nephew and I love to give them things that are fun and crazy!! Just like me!!

Traveling Disco Ball













We got a LIFE size Hulk to blow up for Nephew in the pool and he his mouth dropped when it blew up!! 
Tons of fun stuff mustaches and spray guns!! 

What fun is it to not have fun!! We even brought the Disco Ball!! 

The weather was cloudy the first few days with rain but this allowed us to do some serious shopping for food and last minute wedding things!!

We had a practice session in the park with dinner at Owen's parents beach house! What a family they are all really awesome and I enjoyed meeting Owen's sisters from NYC for the first time!!

We had someone come and do our hair for the wedding at the house and I did Angie's makeup with forever makeup and my naked eye palette 
Really every dress she tried on was amazing but writing this now I couldn't even look at her on the wedding day for fear I would burst into tears!! Isn't she beautiful!!

The ceremony was in the park and it was so personally done by Owen's uncle with a blessing by the holiest women I know my mother over the rings!! I loved it! 

They finished with vowels to say I Do and a jump over the broom!! 
It was a beautiful day for a wedding!!

Grilled Zucchini with Lemon Salt, YUMMY!!



I love grilled vegetables more than anything on earth. 
Well, except my Cat Kids. And my husband. 
And chocolate caramel sea salt shakeology.
But other than that, I love grilled vegetables more than anything on earth!

This week with Memorial Day marking the start of summer I am posting ALL About the grill!! And the MAGIC you can make outdoors!!

And this grilled zucchini will rock your ever-loving world.
My goodness.
Serve it with fish! Chicken! Pasta!
Serve it with a glass of wine!
Ice water works well, too.



Lop off the tops and bottoms of the zucchini, then cut them into quarters lengthwise.
In other words, cut ‘em into spears.



Grill, grilled veggies, eat clean grill, sides, dinner, vegan, Sara Stakeley, Sarastakeley.com, PCOS chef, PCOS, easy recipe, healthy, Throw the zucchini into one of those enormous ziploc bags, or two regular-sized ziploc bags.



Pour in some olive oil…

Lemon ZestThrow the lemon zest into the bag…



Then squeeze in the juice of the lemon.



Sprinkle in some salt and pepper.



Then seal the bag and smush the zucchini around a bit to get it all coated.



Yummy! 
Now, you can let this sit around for 20 minutes or so, or you can just keep on going.
I’m gonna keep on going.
I’m hungry.

I like grilling wedges like this, as you can easily grill each of the three sides and they look really pretty when they're all grilled up.



Take the zucchini off the grill as they get done and pile them up on a plate.



Now, zest a couple more lemons and pile the lemon zest on a cutting board.



Sprinkle some kosher salt on top of the zest…



And chop the zest and salt together a little bit until they become one.



PCOS ChefLemon salt! It’s a little like lime salt for margaritas…or lime sugar for margaritas…depending on your poison.
Note: This won’t keep very long before the salt starts to dissolve and disappear into the zest, so don’t mix it together until just before you need it.
Or, if you have time, spread out the zest and let it dry out a bit before you sprinkle on the salt.



Then just sprinkle the lemon salt generously over the zucchini!



This is absolutely beautiful, guys. The lemon zest really tones down the saltiness so the whole thing is really fresh and lovely. And you can use the lemon salt to sprinkle on so many things: roasted chicken legs, corn on the cob, grilled fish, steamed veggies…even popcorn. Why not?

Grilled Zucchini with Yummy Lemon Salt

Ingredients

  • 6 whole Zucchini (medium Sized)
  • 1/4 cup Olive Oil
  • 1 teaspoon Kosher Salt
  • 1 teaspoon Black Pepper
  • 3 whole Lemons, Zested
  • 1 teaspoon Kosher Salt (additional)
  •  Extra Olive Oil If Needed For Brushing

Preparation Instructions

Lop off the tops and bottoms of the zucchini and slice them into quarters, lengthwise. Place them all in a very large (or two regular sized) plastic zipper bag. Drizzle in olive oil, 1 teaspoon salt, pepper, 1 tablespoon lemon zest and the juice of two lemons. Seal the bag(s) and smush them around a bit so that the zucchini is coated. Set aside for 15 to 20 minutes to marinate.
Prepare the indoor or outdoor grill to medium to medium-low heat. Grill the zucchini on all three sides until nice and tender, being careful not to burn them. Remove the zucchini to a plate as it gets done.
Pile up the rest of the lemon zest and sprinkle 1 tablespoon kosher salt on top. Use a knife to chop the salt and zest together until it becomes...well, lemon salt! Add more salt if it needs it. Sprinkle the lemon salt over the plate of grilled zucchini and serve.
