21 day Fix review

Umm hello can you say genius!!!   I am so excited about this.  How often do you know or maybe you feel this way about yourself.  You are eating healthy you are exercising but you just aren't losing weight.  Well it could be something as simple as the portion sizes of the food you are eating. So this program is specifically designed to help you in that area!!!

I love that when I got to meet her at Leadership she talked about a personal friend and her struggle with weight loss. She said her friend was complaining about not losing weight and they where at lunch both eating salads (Big Restaurant Salads) with grilled chicken and tons of veggies!! A healthy dressing and all! Autumn said that she at 1/3 of the salad and her friend ate the whole bowl.... At that moment it hit her!! She's over eating on healthy food. The more she looked into his as a trainer the more she could see the need for this to be fixed. And now the world can benefit from what has worked for her and her friend!!

Real results from the 21 day fix
21 Day fix Test group results

 As a Star Diamond
Team Beachbody Coach I had the opportunity to do a group workout with Autumn Calabrese at Leadership in September of this year!   The one thing that I truly loved about the workout was the modifications. Researchers have found that in the first 30 minutes of a workout is when you get the best results, and the workouts are only 30 minutes a DAY!!   They also had great modifications that a beginner could truly do.  If you are more advanced then you followed that instructor.  It was positive, uplifting, engaging and I got a great workout!  I am literally going to be sitting at my computer when it's released to order!  I cannot wait for this!
The meal plan is going to be out of this world and if it fits in the container you can eat it!!

No Velveeta No Worries!! Clean Eating Super Bowl Snacks and homemade BLOCKLESS Velveeta Cheese!!

That’s right, the Super Bowl is quickly approaching and although our team (and by our team, what I really mean is my Team, husband is NOT a football fan.... I know!!!  – the Steelers) didn’t make the cut, we will still be eating Super Bowl food on Super Bowl Sunday.

2014 Super Bowl Party ideas
Here is a roundup of some of my
Top Clean Eating Super Bowl recipes:

1. Homemade Velveeta Recipe

super bowl party, Super bowl food, Super bowl clean appetizers, Sara Stakeley, Sarastakeley.com, Velveeta shortage, homemade Velveeta, crockpot, dips, eat clean wings, spinach dip, Vegan wings, roasted chickpeas, high protein, quesadillas, Clean potato skins, homemade hummus, Chili, Pittsburgh, Steelers, snacks ,party , football Sunday,
Homemade Velveeta

Makes about 4 cups.

Ingredients
  • 16 oz (1lb) Natural American cheese
  • 8 oz Sharp Cheddar cheese
  • 1 Cup milk
  • 1 1/2 teaspoon cumin powder
  • 1 10oz can diced tomatoes & green chilies -drained* (optional)

Instructions
Microwave directions:
  1. Place all ingredients inside a large microwave-safe bowl. Microwave on high for 5 minutes, stopping to stir every 1-2 minutes. The mixture might seem watery during the first few stirs, but should come together as a nice runny dip after all the cheese is melted.
  2. Serve immediately as a dip with tortilla chips. You can cool this in a loaf pan and refrigerate for a week to use as you would use traditional Velveeta.
Crockpot directions:
  1. Place all ingredients in a small crockpot (that will fit at least 4 cups of liquid). Turn crockpot on high for 2.5 hours. Mix ingredients every hour to prevent cheese from sticking to walls and possibly burning. Reduce heat to lowest setting and enjoy!
 Notes:
  1. Not all white American cheeses are made equal. Check ingredients because some… well, don’t really expire. If it says “cheese product” it’s probably not real. I used Land O’Lakes brand in our test. Yes, I know… not the best but many of you asked for it. After tests, there is just no way to get around it. Get the best quality you can find and afford. For both recipes, I purchased the cheese from the deli counter in a big chunk –don’t use sliced cheese.
  2. *To make this as a true Velveeta replacement, take out diced tomatoes and green chilies and add ½ cup additional milk. Cool and refrigerate or freeze in 1-cup portions. Reheat every 30 seconds until creamy and hot. Use as you would cook with Velveeta.
Notes
*the diced tomatoes & green chiles is optional but it adds a lot more flavor. For plain velveeta, omit.

Baked Buffalo Wings - Eat Clean appetizer
Wings

Nothing scream Super Bowl like a plate of fresh baked Clean Eating Buffalo Wings!!

2.  BUFFALO WINGS (or anything made with Buffalo sauce!)
When I think Super Bowl, wings are the first thing that come to my mind.  Sure some people deep fry their wings but not clean eaters like you and I.  And the great think about Baked Buffalo Wings is that they are much easier than dealing with a deep fryer, they taste absolutely delicious, and just so happen to be better for you.  Take that, deep fried wings!  I like the these for a smaller group and often times make them for a week night meal regardless of whether or not we are watching football.
And if you like buffalo wing sauce but don’t eat meat the these Clean Eating Buffalo Cauliflower Bites may be just what  the doctor ordered. I will post the recipe below for you and my animal loving Sister!!

Wings

  • Preheat oven to 400°. Set a wire rack inside each of 2 large rimmed baking sheets. Place all wings and 1/2 of the ingredients for sauce or Local favorite Quaker Steak take home sauce like I do in a large bowl; toss to coat. Divide wings between prepared racks and spread out in a single layer.
  • Bake wings until cooked through and skin is crispy, 45–50 minutes.
  • Line another rimmed baking sheet with foil; top with a wire rack. Add half of wings and toss to evenly coat. Place wings in a single layer on prepared rack and bake until glaze is glossy and lightly caramelized, 8–10 minutes.
  • Toss remaining half of wings in Buffalo sauce. Serve immediately (no need to bake).

3. CHILI
Clean Chili

Click here for this crock pot recipe>> Turbo fire Chili!!

4. HUMMUS
Hummus is very simple to make at home!!
This is a fun way to do something a bit different in the world of hummus and would be delish with some baked pita chips or of course, raw veggies.

Roasted Red Pepper Hummus

hummus

Yield: Serves 8 as an appetizer

Ingredients:

  • 2 cloves of garlic, minced
  • 1 15 oz. can of garbanzo beans, drained and rinsed
  • 1/3 cup of tahini
  • Juice of 1 lemon
  • 1 12 oz. jar of roasted red peppers
  • 1 tbsp. of extra virgin olive oil
  • A big fat pinch of salt

Directions:

Place the garlic into food processor and pulse until minced.
Add the garbanzo beans, tahini, lemon juice, and oil.  Pulse until smooth.  Toss in the roasted peppers and salt and pulse until everything is incorporated.
*If you want to cut back on the calories and fat a bit, eliminate the olive oil and reduce the tahini to 1/4 cup.  In order to make up for the lost liquid, add a couple of tbsp. of the liquid from your roasted pepper jar into the hummus!
5. JUST SOME RANDOM FINGER FOODS
Now this one may surprise you but yes, in my book, there is a way to fit Bacon Studded Potato Skins into a clean lifestyle.  Hey everything in moderation guys and besides these skins are 100% real food. So oh yes, enjoy!

Bacon Studded Potato Skins
Clean potato skins

Yield: Serves 4-6
Prep Time: 30 minutes
Cook Time: 1 hour 30 minutes
Total Time: 2 hours

Ingredients:

  • 6 small to medium sized russet baking potatoes (about 3 pounds)
  • Cooking spray
  • Garlic powder
  • Salt & pepper
  • 5 strips of reduced fat bacon
  • ½ cup of part skim shredded cheddar cheese
  • 1/2 cup plain non-fat Greek yogurt
  • 3 green onions, thinly sliced, including the greens of the onions

Directions:

First you’ve got to bake the potatoes, so scrub the potatoes clean, poke some holes in them, and then bake them in a 400 degree oven for about an hour or until done.
While the potatoes are cooking, cook the bacon strips in the microwave or in a frying pan (I prefer the microwave). Make sure you get them good and crispy! Drain on paper towels. Once they have cooled a bit crumble them up with your fingers.
Remove the potatoes from the oven and let cool enough to handle.  Cut in half horizontally.  Use a spoon to carefully scoop out the insides, saving the scooped potatoes for another use, leaving about 1/4 of an inch of potato on the skin.
Lay potatoes skin side up on a baking rack on a rimmed baking sheet.  Spray each potato with cooking spray and then season with salt, pepper, and garlic powder.  Cook for about ten minutes and then flip skins over and season the inside before popping back into the oven for another ten minutes or until your skins are nice and crispy!  Remove from the oven and let cool long enough to handle.
Sprinkle a little cheddar cheese and crumbled bacon on each potato skin and then back in the oven they go. Cook for another two minutes or until the cheese is melted and bubbly and then remove from oven.  Use tongs to place skins on a serving plate.  Add a dollop of  Greek yogurt to each skin and sprinkle with green onions.
Serve immediately.
Serves 4 to 6.

Broccoli And Chicken Quesadillas

Super Bowl Snacks

Yield: Serves 1-2
Prep Time: 10 minutes
Cook Time: 5 minutes
Total Time: 15 minutes

Ingredients:

  • 2 ounces of pre-cooked shredded chicken
  • ½ cup of steamed broccoli, chopped up
  • 1/3 cup of part skim shredded mozzarella cheese
  • 1 whole grain tortilla (I like Ezekiel)
  • 2 tbsp plain, no fat Greek yogurt
  • 1 tsp red pepper sauce

Directions:

Combine Greek yogurt with hot sauce and set aside.
Heat chicken and broccoli in a large non-stick pan over medium heat.  Once heated through, remove from the pan and place in a medium bowl.
Toss chicken and broccoli with salt, pepper and garlic powder and then set aside.
Place tortilla in the hot pan and allow to heat through on one side. Flip the tortilla and sprinkle half of the cheese over one half of the tortilla.  Top cheese with broccoli and chicken and then sprinkle the rest of the cheese over the top.
Using a spatula, fold the tortilla over on to itself (into a half moon) and top with something heavy (i.e. a weighted pan or my personal favorite, a teakettle).  Allow to cook for a minute or two, or until the bottom is lightly browed.  Flip the tortilla and cook for another minute or two on the opposite side.
Remove  the Quesadilla from the pan and allow to cool for a minute or so before cutting into wedges.  Top with spicy yogurt and enjoy!!
6.  CLEAN+DELICIOUS DIPS
This is one of my personal favorites.

High-Protein Spinach and Mushroom Dip
Chips and dip are the most classic party food. Don't throw away your clean diet by dipping Doritos into microwaved Velveeta cheese and salsa. Instead, try this protein-filled dip with some brown rice crackers.

Eggs Baked in Avocado:

www.saraestakeley.blogspot.com/

  Ingredients
1 large, just-ripe Haas avocado...
2 eggs – the smaller the better
1/4 teaspoon kosher salt
Freshly ground black pepper
2 tablespoons cooked red salsa or tomato sauce

Directions
1. Heat oven to 450 degrees F. Line a baking sheet with foil.

2. Cut the avocado in half and remove the pit. Using a spoon, scrape out the center of each half – you want it to be large enough to accommodate a small/medium egg.

3. Season the avocado halves with salt and place on the prepared baking sheet. Break each egg into a small bowl, then carefully slide the yolk, and as much as will fit from the white, into the center of each avocado half.

4. Bake 15 minutes, or until whites are set. Remove from the oven. Allow to slightly cool, about 5 minutes (it will be too hot to enjoy straight out of the oven), then sprinkle with freshly ground black pepper and garnish with salsa. Serve as is with a spoon, or scoop out and spread on warm toast.

Can you have too much natural sugar in a day? Can it affect my weight loss?

Sugar and fruit
I was talking to one of my challengers last week and we were discussing why she was stuck at a weight loss plateau. I was just asking her questions and trouble shooting what the issue could be.  One of the things that I know really affected me personally was the amount of sugar that I took in on a regular basis.  I was eating clean, following the proper portion sizes and not really having any cheat meals but I wasn't budging on the weight loss.  So I decided to start tracking my food with myfitnesspal to see where I was going wrong.  It was apparent after just a few days that I was getting way to much sugar each day from natural sources.  For instance, I would have a full banana in my shake, have a cheese stick and 20 grapes for a snack and then carrots and hummus as a snack.  From a general perspective that looks perfect, clean and healthy.  In reality I was taking in to much natural fructose and I was stalling out my progress.  It wasn't until  I started tweaking my daily sugar intake that things started to change.

So I am going to give you a glimpse into my own head and how I tweaked my plan.
When you are trying to lose those last few pounds or even want to break a plateau your food consumption makes a difference.

When planning out my meals I never put grapes, mangoes and bananas in the same day.  I always space them out.

Always measure your grapes.  It's super easy to grab a few handfuls here and there but with 23 grams of sugar per serving that adds up quickly.  I measure my grapes, put in a baggie and eat what is in there!

For bananas, I very rarely eat a full banana any more. I put a 1/2 banana in my shake most days unless I am going to be eating grapes then I leave out the banana.

For fruits you always want to measure them out.  I do two cupped handfuls or 1 cup of fruit per serving.  I actually only do 1/2 cup blueberries in my morning oatmeal.

I keep my fruits to 2 servings per day with the max being 3.  If I do 3 then at least two have to be berries.  Right now apples are the easiest snack for me and a lot of times I do an apple and 14 raw unsalted almonds as my am snack!

Carrots- I don't even eat carrots as a veggie anymore.  I try to stick with cucumbers, celery, peppers, cherry tomatoes, and broccoli. This also keeps that sugar in check.  Carrots are the highest sugar veggie!!  Which makes sense why I wasn't losing weight. They have that hint of sweetness and I would take down a mini bag at a time.  AGAIN, thinking I was doing a good job by making healthy choices but in reality I was just killing the sugar level!!!  I know, it seems crazy but track it you will be amazed!

So the one thing I noticed when I started to pay attention is that there are a lot of places that sugar is hidden.  You have to read your labels on everything.  You would be so surprised at the random places and names for sugar.  One question I was asked is what type of sugars do you use.
I actually only use honey and maybe agave nectar but not very often.

I didn't start out this way.  I used to put 3 tbsp of sugar in my coffee followed by creamer.  I never thought I would be able to drink my tea and coffee black.  But I kept cutting back and then one day I thought, HECK if this is stopping me from losing weight then I'm cutting out the sugar.  Guess what, it helps and I will never go back!  I can sniff out sugar in an instant.  Plus now that I don't eat it, my body doesn't always react well when I eat sugar.

If you need a sugar substitute then go with raw honey, raw maple syrup, agave nectar!  Try to stay away from everything else.  It will make a difference for sure.

Many names of sugar

Also, when I did start cutting back the sugar I started craving it quite a bit!!!  It took 1 week before the sugar cravings were completely gone.  Now I can say confidently that I don't need something sweet after dinner. In the past I had to hav a sweet following dinner.  I can bypass cake and cookies and know that I want to reach my goal weight more than I want the cookie.  But don't get me wrong. I love sweets, I enjoy every minute of them and I do let myself have something if I really want it.  But it's all in moderation and I only do a cheat meal once a week!!!

P90X3 Review

Well after two weeks I have to say that headed into week three this week and writing this Monday after my workout... I love P90X3!! The first week was hard and I think I just needed to get the moves down and push through the sore muscles. But by week two I was already feeling better and even found a new love for CVX (Cardio Death with weights.. LOL) I actually enjoyed it!! Really the workouts are only 30 min, six days a week and if anything I peel myself off the floor and just keep going!!
It sounds crazy but I am excited to take my measurements in two weeks... I already feel a difference in my clothes and find myself stopping in front of the mirror to see a difference after my shower.
If you break it down I am only working out for 3 hours a week.... YEP!! THREE HOURS!! And I am down 6.5 POUNDS!! In the first two weeks!! I'LL take it!! :)

The challenge I am currently running is a closed Facebook group so only members of the group can see what is posted and I have to say the motivation and support is awesome!! I really can't wait to jump on Facebook in the morning and check on this group!! Everyone is doing a Beachbody workout of choice and replacing one meal a day with Shakeology we all have very different goals with this challenge some want t lose the last 10 pounds, some want to get better with eating habits for themselves and their family, and some are like me when I started and they have a lot of weight to lose. Everyone is very supportive and it is nice to see the friendships already starting to form as we head into week three. I know it is crazy but we are like a little online family and some are local but some are not and I hope to meet them someday face to face.
One thing I have learned is that supportive women are still in this world and weight loss can be very personal but not here... you somehow learn to break down that wall and get real with eachother and give it your all through the good and bad. Not like a weekly meeting where I have felt like I was somehow being punished for being overweight!! I could cry at the thought and for how much my world has changed since I found Beachbody over 2 years ago!! The friendships I have made and for the lives I have changed all while helping mine.
I know time can be hard and maybe you feel lost and have tried EVERYTHING!! But I will tell you if you are ready.. learn to let go.. YOU CAN DO THIS TOO!!!

Pork Tenderloin with Cranberry Sauce (Eat Clean)

http://saraestakeley.blogspot.com/p/recipes_13.html

Crockpot Pork Tenderloin with Cranberry Sauce
Serves 6

Two 1 lb pork tenderloins, or one 2 lb pork tenderloin
Sea salt and pepper
Herbamare, optional
1 tsp dried rosemary
3 cups fresh cranberries, divided (I bet defrosted frozen cranberries would work)
2 apples, cored and sliced thin, divided (I used Granny Smith)
1/4 cup juice or water (I used Organic Cherry; however, Organic Apple or Orange would be ideal)
2 tsp citrus zest, divided (I used lemon, but orange would be divine!)
1/4 cup maple syrup or raw honey, divided
Lightly mist the inside of your slow cooker with cooking spray or EVOO in a Misto.
http://saraestakeley.blogspot.com/p/recipes_13.html
Place half of the apple slices on the bottom of the slow cooker followed by 2 cups of the cranberries, 1 tsp citrus zest and 2 tbsp maple syrup or honey.

Place the pork tenderloin on top of the cranberries. Generously season the pork with sea salt, pepper, rosemary and Herbamare, if using.

Top the pork with the remaining apple slices. Sprinkle the remaining cranberries on top of and around the pork tenderloin. Sprinkle the top with the reserved 1 tsp citrus zest and 2 tbsp maple syrup or honey.

Pour the juice or water into the slow cooker.

Securely place the lid on top of the slow cooker and set it to cook on Low temperature for 6-8 hours, depending on the size of your pork tenderloin. I used  two 1-lb pork tenderloins and they were fully cooked at 6 hours.

If possible, remove the pork tenderloin and allow to rest in a warm place for 30 minutes on a plate covered with a heavy towel or two. Set the heat on the crockpot to high and remove the lid. Cook sauce for an additional 30 minutes to thicken.

Alternatively, you could stir 1 tbsp arrowroot whisked into 2 tbsp of water into the sauce after removing the pork from the crockpot.
With the addition or a starch/grain and a green veggie, this is a decadent clean meal!!

Mini Pita Pizzas (Eat Clean)

I love pizza and so does my Husband.  This is a healthy and easy way to satisfy those cravings without all the grease and fat. I find that the Friday pizza night craving never really goes away!! Every once in a while you have to indulge in the things you like but it is important to have them in moderation.  You can make substitutions that won't wreck all the hard work that you put into your body. Pizza comes up as a cheat meal often in my challenge support groups and HEY why waste a cheat meal when you can save it!!! LOL!!

Ingredients:
  • 100% Whole Wheat Mini Pitas
  • Olive or Grape seed oil
  • Shredded Part Skim Mozzarella Cheese
  • Natural Pizza Sauce
  • Add veggies that you love, I have used sauteed mushrooms, garlic, red onions, fresh tomatoes and basil.  You can also experiment with sliced chicken, ground turkey ect.
Arrange pitas on a cookie sheet and lightly brush with oil.  Top with pizza sauce, veggies and mozzarella.  Bake until cheese is melted.  Enjoy as an appetizer, snack or meal!

Healthier Pizza

I made this recipe for a party I had as an appetizer but tonight it will be dinner and a side salad!
Yummy!!

Set Goals, Dream it, Believe It!! 2014 will be a great year with P90X3 and the 21 Day Fix!!

As we kick off the new year it is a time to reflect on the past and move forward to the new year!

New Year, New Goals

When I look at my 2013 year it was a year full of BIG change!!
My focus was to surround my life with people and things that only life me higher!! I was driven and had a goal to FIRE my BOSS!! Take Vacations and not have to use a credit card and make a income to support my family from home and make big moves in my life.

When I signed as a Beachbody coach in December of 2011 I did so because I loved the health benefits of Shakeology and I was off prescriptions for PCOS (poly cystic ovarian syndrome) that I had been on for 13 years, and high blood pressure medication that I had been told I would be on for the rest of my life due to family history.

I am a girl that loves a deal and I could save 25% on my shakeology order by signing as a preferred coach. In that first month in my business I was injured at home with a concussion and vertigo that didn't allow me to work outside the home or even get off the couch. Now I have worked as a skin tech in a spa for over 10 years and I love my job, but I will never have paid time off or sick days with this business. If I don't have clients I don't get paid!!
So that first month ended up a little different for me.... It became a way for me to make money from home save on my shakes and actually get my shakes paid for in the first month of my business. I even made enough to be able to have a Christmas and get gifts for family and friends. That was my AHA!! moment that this just might be something I CAN DO!!

In the past I couldn't afford to vacation how I had dreamed because once again I was not paid for time off. As a Beachbody coach I was away and still made a paycheck on vacation!!

Freedom in life to do what you want to do and not be tied down to a 9 to 5 is a dream to me and I am living it!!

In May I was able to "Fire my Boss" this was a scary BIG move for me!! I had a pretty set income at the spa where I was working for 8 years prior, a set clientele, and set hours where I would have to beg to receive time off. I was doing what I loved but feeling like a cash cow for someone who didn't appreciate me.   I continue to work at a local Spa but now I am able to run the Spa and work 3 days a week. I feel it is a good balance for me to continue to enjoy what I love to do outside of the home and continue to make a income and grow my business from home as well. This was the first Christmas in years I actually got to take some time off and enjoy the holidays with my family and friends.

New Year New You, lose weight, weight loss, New Year, financial freedom, vacation free, goals, job, make income from home, change lives, help others, purpose, help, make money, Sara Stakeley, new job, dream big, P90X3, 21 day fix,

Beachbody has helped me financially but it has also helped me in ways that can not hold a dollar amount. It has provided me with a strong circle of friends that only want to lift you higher, and are so supportive and just tons of fun!!

I am writing this from home on a snow day for my Teacher husband because it is freezing here in Pa and when I asked him what do you think is the best thing that has happened to us since I became a coach he replied amazing trips with amazing people. The crazy part is we would of never met some of them or even crossed paths since they are from all over the U.S.!!

In the New year I have worked on a goal board and set up a clear plan for what I want this year for myself, my family, my business and team!

Goal for the year!!

My commitment to those that are on my team and to those that are joining my team is this!  We are not slowing down, we will not go stale, we will improve our processes, we will be even more successful, we will be a family, a team that works together and a team that supports each other in all that we do!  We will continue to share our knowledge and tips with each other and we will continue to be a team that has very high standards.  To my team I promise this, I have your back, I trust you and you can trust me!!  So lets make 2014 a year to REMEMBER!!!!!!

Be the first to know about the 21 day fix
Beachbody 21 Day Fix

For my fitness, my goal is to complete P90X3 down 30 pounds and then the 21 day fix which will come out February 3rd of this year.  My goal is to tighten up my diet and stay disciplined enough to lean out and really achieve the healthy goal weight I am working on.  I really do great but then I get comfortable and stop progressing!  I eat clean but to be lean that takes even more discipline.  I want to hit my goal weight and hold it!!
Motivation

My personal goal is to continue to grow in personal development which focuses on personal growth and leadership.

The most important thing is this BALANCE!  I strive to maintain a healthy balance between my passion and my family! They are the ones that matter the most!  At the end of my life I want my husband to know that he is my driving force, my reason for working hard and that my work doesn't mean more than he does!!  I hope to continue to build this future that is full of happiness, love and compassion!

So, now that I have shared with you all of my sappy goals and my inner thoughts I want you to know this!  If you have ever considered becoming a coach or want to know more about coaching now is the time.  It's the start of a new year, a new opportunity to get connected to those that care about their health and fitness and to those that are seeking to better themselves, physically, emotionally and financially.  If you are looking to earn extra income or replace a current income please contact me today.  I am accepting applications for my next coach apprenticeship program.  I will only accept a limited number of people because my goal is to provide you with the best quality of service, guidance and support.  Realistically I can only do that for a small amount at a time!  So if you would like to be mentored by me, someone who is passionate about helping others I encourage you to fill out the application below to be considered for a spot on my team!!

What is a beachbody coach ?
