Mini Pita Pizza's

I love pizza and so does my hubby.  This is a healthy and easy way to satisfy those cravings without all the grease and fat.
Every once in a while you have to indulge in the things you like but it is important to have them in moderation.  You can make substitutions that won't wreck all the hard work that you put into your body. 

Ingredients:
  • 100% Whole Wheat Mini Pitas
  • Olive or Grape seed oil
  • Shredded Part Skim Mozzarella Cheese
  • Natural Pizza Sauce
  • Add veggies that you love, I have used sauteed mushrooms, garlic, red onions, fresh tomatoes and basil.  You can also experiment with sliced chicken, ground turkey ect.
Arrange pitas on a cookie sheet and lightly brush with oil.  Top with pizza sauce, veggies and mozzarella.  Bake until cheese is melted.  Enjoy as an appetizer, snack or meal!

Beachbody’s Thin Kitchen Recipe Book – Sweet and Sour Meatballs

Sweet and Sour Meatballs

Sweet and Sour Meatballs

You will need:
For the meatballs: 
1 LB of lean ground turkey
1 cup cooked brown rice
1 8 oz. can crushed pineapple in juice, drained
1/2 cup green onions
1 Tbsp. light soy sauce
1 tsp. ginger
For the sauce:
3/4 cup reduced-sodium, low-fat chicken broth
1/3 cup chili sauce
3 Tbsp. rice vinegar
2 Tbsp. brown sugar
2 tsp. cornstarch
1/2 tsp. ground ginger
Preheat the oven to 350 degrees. Combine meatball ingredients in medium bowl and mix thoroughly. Line a baking sheet with foil (this helps with cleanup). Place cooking racks in foil-lined baking sheet. Shape meatballs, and place on the racks. Bake for about 25 minutes or until thoroughly cooked. Transfer the meatballs to a serving dish and cover to keep warm.
Combine the sauce ingredients in a small saucepan and stir until cornstarch is dissolved. Place over medium heat and stir intermittently until mixture comes to a boil. Reduce heat to low, and stir for another minute or until mixture thickens slightly. Pour sauce over meatballs, and gently toss to coat meatballs. Serve warm with toothpicks. (makes 37 meatballs)

With Thanksgiving a two days away it is a clean out the fridge party in my house!! This is one of my favorites! It is easy to do and perfect for left over brown rice.  Make sure to use leftover, day old rice when making fried rice. Freshly made rice will make a fried rice that's mushy.   ~ Enjoy!!

Clean Shrimp fried Rice


  • Yield: Serves 4.

Ingredients

  • 8 ounces small raw shrimp, shelled and deveined
  • 1/2 teaspoon kosher salt
  • freshly ground black pepper
  • 1/2 teaspoon cornstarch
  • 2 tablespoons cooking oil, divided
  • 3 eggs, beaten
  • 2 stalks green onion, minced
  • 4 cups leftover rice, grains separated well
  • 3/4 cup frozen peas and carrots, defrosted
  • 1 tablespoon soy sauce (use gluten-free soy sauce if you are making a gluten-free version)
  • 1 teaspoon sesame oil

Method

1 In a bowl, toss the shrimp with the salt, pepper and cornstarch. Let marinate for 10 minutes at room temperature. Heat a wok or large sauté pan on high heat. When the pan is hot enough for a bead of water to instantly sizzle and evaporate, add just 1 tablespoon of the cooking oil and swirl to coat pan.

2 Add the shrimp, quickly spreading out around the cooking surface area so that they are not overlapping. Let fry, untouched for 30 seconds. Flip over and let the other side fry for 30 seconds, or until about 80% cooked through. Remove the shrimp from the pan onto a plate, leaving as much oil in the pan as possible.

3 Turn the heat to medium, let the pan heat up again. Add the eggs, stirring in a quick motion to break up and scramble the eggs. When the eggs are almost cooked through (they should still be slightly runny in the middle), dish out of the pan into the same plate as the cooked shrimp.

4 Use paper towels to wipe the same wok or sauté pan clean and return to high heat with the remaining 1 tablespoon of cooking oil, swirling to coat. When the oil is very hot, add the green onions and fry until fragrant, about 15 seconds. Add in the rice and stir well to mix in the green onions throughout. Spread the rice all around the wok surface area and let the rice heat up, untouched until you hear the bottoms of the grains sizzle, about 1-2 minutes. Use the spatula to toss the rice, again spreading the rice out over the surface of wok.

5 Drizzle the soy sauce all around the rice and toss. Add the peas and carrots, the cooked eggs, shrimp and sesame oil, tossing to mix the rice evenly with all of the ingredients. Let everything heat back up again, until the rice grains are so hot they practically dance!
Taste and add an additional 1 teaspoon of soy sauce if needed

The holidays are tough – no buts about it. So how to you protect the size of yours and still enjoy the season? Can it really be done?  I mean can you really have your cake and eat it too?  Of course you can!  I am going to teach you how.   With Halloween behind us, Thanksgiving around the corner and Christmas and New Years on the horizon, it is time to start mapping your strategy to win this war.

While the legend has it that the average American gains 5 pounds during the holidays, there isn’t a whole lot of science behind that statement. In fact, there is a study that shows that we actually only gain 1 pound, but don’t slam back that glass of wine just yet. The same study also shows that we never lose that pound, so let’s take a peek 10 years into the future and see how good that looks and feels. The bottom line is that if you want to protect your shape or even improve it this holiday season, it will take a little effort. But fear not, I am here to help! I also want to note that you aren't going to be completely depriving yourself of all things that you enjoy during the holidays.  We are going to learn some balance.

We have  days until New Year’s Eve, about 6 weeks. And those weeks will be full of candies, baked goods, decadent meals, and festive cocktails — all of the time! The math shows us that even just one, seemingly innocent, extra little treat a day (like piece of cake, pumpkin bread, an extra martini, seconds at meal time, anything about 300 calories) for the rest of the year will guarantee a 4.7 pound addition to your body. Blah. That means tighter pants, larger muffin top and jigglier arms. Not the best look for your New Year’s Eve plans. Now for the good stuff. On the flip side, instead of eating it, you decide to burn it, you can chisel off those same 4.7 pounds and ring in the new year light, brighter, happier, healthier and more confident. Pretty good deal, right?

Holiday Challenge

So what is the Holiday Clean Eating and Shakeology Group?
Well it is a 30 day group in which I am going to teach you basic strategies for how to plan out your meals, give you recipes, tips and all the tricks that have helped me be successful in my weight loss journey.   Last November I bought and sold a house, survived the move, lived thru Thanksgiving and Christmas and still lost 5 pounds. So how am I going to do that you ask? Well I am going to host a 30 day clean eating and Shakeology accountability group.  It is closed so no one can see what is posted but the group.  Each day you will get a post from me.  It will be a tip, motivation, recipe or meal plan.  Each day you are required to just check in and rate your day.  My goal is to teach you how to make healthy eating a lifestyle vs a crash diet.  we will learn how to have balance over the holidays, handle eating out, parties, social events, cravings and more!  I have lots of tricks up my sleeves and I will share them all with you!

The requirements are that you commit to being an active participant in the group.  Now this is not a huge time commitment, literally a few minutes each day.

Thanksgiving Day Tips,Tricks, and Recipe Ideas!!

I love Thanksgiving it is a holiday about family and friends but like most holidays it is surrounded by food!! It is a hard one to break tradition and change but I have found a way to let myself enjoy and not feel guilty or stuffed and uncomfortable after!

I plan to start my day with a workout this way I will burn a few calories right out of the gate!! You could start your day with a walk of turkey run!! Or even plan a walk for after dinner!!
I will eat my normal breakfast and spice it up a little with my Pumpkin Pie Oatmeal have my eggs for protein and black coffee!!

TIP: Never skip a meal just because you have a big meal later!! This will starve your body and make your body go into starvation mode hold calories, and slow down your metabolism!!
 
 
 


 If you are having guest and you don't want to over kill them with PUMPKIN!! (for me more is better!!) I would make one of my favorite breakfast bakes! Blueberry French toast bake or Oatmeal Bake.  Both are amazing and simple and I have made it for guests and they love it!!

Depending on what time you have dinner you will want to have a snack 3 hours after breakfast. For me this will be my Shakeology I have it everyday for my daily dose of vitamins and both my Husband and I will have our daily shake so we are less likely to snack at Moms and for me it will help fight cravings for the day!




 I can snack on veggies when I get to my Moms if I am feeling a little hungry. I plan to make and take a veggie tray so I have this option and if you are headed to a party this is a veggie tray that will OOH and AW your friends!!

My Mother will make the Turkey, stuffing (my favorite) and mashed potatoes and it is my job to bring a veggie side and veggie tray!!. My Brother will bring the pies!!
 I plan to make two sides 1 being the roasted root medley and the other Brussels sprouts and I will share with you those recipes below!
The key to staying on track for Thanksgiving is going to be portion control!! If you look at your plate you want to fill the majority of your plate with veggies and 4oz lean (no skin) turkey breast as your protein 1/4 th of your plate. The same goes for the stuffing and mashed potatoes or sweet potatoes 1 cup or the size of your closed fist 1/4 th of your plate.
So I am a LOVER of mashed potatoes and stuffing so I plan to have a little taste of both.

 Now with every holiday comes ALCOHOL a glass of wine with dinner or a beer if you are my Husband!! And my trick for that is every drink I have I must drink a whole glass of water in between!! You will be amazed at how much less you drink!! I think we drink more just because we are thirsty!!
 
Pomegranate Fizz-
  I am a big punch person so I always like to have a punch bowel out with a fun drink.  Here's what will be on my table this year.

Ingredients: 

Pomegranate Fizz-
  • 2 oz pomegranate juice
  • 1/2 to 1oz triple sec
  • 5 oz chilled champagne
  • Squeeze of fresh lemon juice
  • 6-8 pomegranate seeds
  • Grated lemon rind zest

Preparation:
In a champagne flute pour the pomegranate juice.  Add the liquer, if using, then the champagne or sparkling water.  Top with a few pomegranate seeds and grated lemon rind.
I am just going to make a larger batch and pour it into a punch bowl.

Alcohol is full of sugar and empty calories so you need to ask yourself, is this short term sacrifice of drinking worth the long term results of me feeling amazing in my body and having the confidence to put myself out there!
 
 
What is the big finish with every Thanksgiving we end the meal with PIE!! You can skip this holiday treat and have Shakeology Pie or Chocolate Macaroons!!! If you can't live with yourself and really want PIE!!  Have a small slice to satisfy your holiday craving!! I am not a baker but I have found two ways to clean up pumpkin pie if you are trying to avoid sugar or just want to substitute if you are more of a salty lover like myself!
Try this!!!
 

Double Chocolate Macaroons
 
Ingredients:
  • 8 oz dark chocolate (60% cocoa or greater) chopped, divided
  • 1 3/4 cup shredded unsweetened coconut
  • 1/2 cup organic evaporated cane juice
  • 3 tbsp natural unsweetened cocoa powder
  • 1/8 tsp sea salt
  • 1/2 cup liquid egg whites
  • 1 tsp pure vanilla extract
  • 1/4 tsp pure almond extract
Instructions:
  • Preheat oven to 350 degrees.  Line large baking sheet with parchment paper.  In a small microwave safe bowl, melt 3 o chocolate in microwave on high for 45 seconds.  Stir and continue to microwave on high for 15 second intervals, stirring after each, until melted.  Set aside and cool.
  • In a large bowl, whisk coconut, cane juice, cocoa powder and salt until well blended.  Stir in melted chocolate until just combined.
  • In a small bowl, whisk egg whites and vanilla and almond extracts until combined.  Add egg white mixture to coconut mixture and stir until well blended. Scoop level 1 tbsp and pinch into a low pyramid shape; transfer to baking sheet.  Repeat with remaining batter making 24 macaroons.  Bake for 14 to 15 minutes, until outer layers are firm, bottoms are lightly browned and centers remain soft.  Remove from oven and let cool on baking sheet for 5 minutes, then transfer to a wire rack to cool.
  • In a microwave safe bowl, melt remaining 5 oz chocolate in microwave for 45 seconds.  Stir and continue to microwave in 15 second intervals, stirring after each, until melted.  Carefully holding each macaroon upside down by its base, dip peaks into chocolate. Place on a parchment lined baking sheet in the refrigerator until chocolate is set, about 30 minutes.  Then store in an airtight container in refrigerator for up to 3 days.

What I have found is if you go into the day with a plan of attack you will have success, you will not feel guilty and you can wake up feeling good that you know Aunt Bertha LOL!! will not seek you out and say I could never do your diet thing you can't even have a slice of pie or the all famous just eat it!! It won't kill you!!

Roasted Root Medley
(Makes 4 serving) 
  Ingredients
  2 medium yam, cut into 1-inch chunks
  2 medium carrot, cut into 1-inch chunks
  2 medium beet, cut into 1-inch chunks
  2 medium onion, peeled, cut into large wedges
  3 tsp. extra-virgin olive oil
Himalayan salt (to taste; optional)

Directions:
1.Preheat oven to 400° F.
2.Combine yam, carrot, beet, onion, and oil, plus salt (if desired), in bowl or dish; mix well.
3.Arrange vegetables in a single layer on a baking sheet. Bake for 40 to 50 minutes, turning once or twice, or until tender

Makes: 10 servings, about 3/4 cup each

Preparation


  1. Bring a large pot of water to a boil. If sprouts are very small, cut in half; otherwise cut into quarters. Cook the sprouts until barely tender, 3 to 5 minutes. Drain.
  2. Meanwhile, cook bacon in a large heavy skillet over medium heat, stirring, until brown but not crisp, 3 to 6 minutes. Remove with a slotted spoon to drain on a paper towel. Pour out all but about 1 tablespoon bacon fat from the pan.
  3. Add oil to the pan and heat over medium heat. Add onion and cook, stirring often, until soft but not browned, reducing the heat if necessary, about 4 minutes. Stir in thyme (or savory) sprigs, salt and pepper. Increase heat to medium-high, add the Brussels sprouts, and cook, tossing or stirring occasionally, until tender and warmed through, about 3 minutes. Remove the herb sprigs. Add the bacon, thyme (or savory) leaves and lemon juice, if using, and toss.


    Make Ahead Tip: Prepare through Step 1, rinse with cold water; store airtight in the refrigerator for up to 1 day. Finish with Steps 2-3, 15 to 20 minutes before serving
